Heat a pot over medium heat with the water and the piloncillo until it dissolves, cook the chilies until they hydrate completely, about 40 minutes. Strain and reserve 5 chilies with a little cooking water for the marinade, the other chilies reserve them separately.
Heat a comal over high heat, roast the tomato, garlic, onion, oregano, bay leaf, cumin, cloves and fat pepper until they release the aroma, taking care not to burn them.
For the adobo, liquefy the chiles and the water that you reserved previously, add the ingredients that you roasted, the marjoram, the white vinegar, salt to your liking.
Heat a pot over medium heat with the oil, fry the onion until it is transparent, add the marinade, cook 5 minutes and add the whole chipotle chiles, cook for 10 minutes, reserve the preparation in a glass jar and chill, serve your chiles in the dish that you like. Enjoy
