The chipotle peppers marinated are delicious and are a very popular preparation in Mexico, which is used to accompany cakes, sandwiches, quesadillas and other dishes. Prepare your own homemade chipotles with this rich and easy recipe made by cooking in water with piloncillo, submerged in a spicy marinade. You'll love it!

Ingredients

10 servings
  • 12 cups of Water 3 liters
  • 1/4 of Cup of piloncillo
  • 30 pieces of chipotle chile pepper without the stem
  • 1 piece of tomato for the marinade
  • 4 cloves of garlic for the marinade
  • 1/4 of piece of onion for the marinade
  • 1 tablespoon of oregano for the marinade
  • 1 sheet of laurel for the marinade
  • 1 teaspoonful of cumin whole for the marinade
  • 1 teaspoonful of whole clove for the marinade
  • 1 teaspoonful of allspices whole for the marinade
  • 1 teaspoonful of marjoram for the marinade
  • 1/4 of Cup of White vinegar for the marinade
  • 1 pinch of Salt
  • 1 tablespoon of oil
  • 1 Cup of onion filleted

    Preparation

    Heat a pot over medium heat with the water and the piloncillo until it dissolves, cook the chilies until they hydrate completely, about 40 minutes. Strain and reserve 5 chilies with a little cooking water for the marinade, the other chilies reserve them separately.
    Heat a comal over high heat, roast the tomato, garlic, onion, oregano, bay leaf, cumin, cloves and fat pepper until they release the aroma, taking care not to burn them.
    For the adobo, liquefy the chiles and the water that you reserved previously, add the ingredients that you roasted, the marjoram, the white vinegar, salt to your liking.
    Heat a pot over medium heat with the oil, fry the onion until it is transparent, add the marinade, cook 5 minutes and add the whole chipotle chiles, cook for 10 minutes, reserve the preparation in a glass jar and chill, serve your chiles in the dish that you like. Enjoy

    Serve chiles in a glass jar.

    TIPS

    Roast the garlic with the skin so that they cook evenly, do not burn and do not make the preparation turn bitter.
