These sweet and sour peppers have a very good flavor, they take a long time to be ready but the result is worth it. I recommend them totally.

Preparation
Roast the peppers. Put them in a plastic bag, let them sweat for 15 minutes and remove the skin in a cold stream of water.
Put the vinegar, sugar, salt and chili peppers in a large pan over low heat until the sugar has dissolved.
Add the peeled and broken peppers to the mixture. Stir well and let simmer for 1 hour and a half stirring from time to time.
Remove them from the heat until they have a consistency of jam. Serves as a garnish.
