This is an excellent garnish because it is very easy to prepare, and it gets along very well with any type of meat, in my case I accompanied it with a ribs to the BBQ on my birthday.

Ingredients

4 portions
  • 1 kilo spinach
  • 1/4 bacon, or bacon
  • 1 onion
  • 1 clove garlic
  • 175 grams sour cream
  • salt, to taste
  • black pepper, to taste

Preparation

Boil a saucepan with water and salt, wash and disinfect the spinach and remove the rib from the leaf.
Finely chop the garlic and onion in squares, then the bacon.
Chop the spinach washed, disinfected and drained, place it inside the saucepan with salt water for no more than 2 minutes. Remove from the water with a sieve and let drain.
So fry the bacon on a hot pan, to release the fat, then add the onion and when transparent add the garlic and let sauté for 2 more minutes.
Add the spinach and cream stir well, and season to taste.

PRESENTATION

Place the garnish on the plate, inside a circular cutter no larger than 5 cm, crush with a spoon and unmold.

TIPS

You can cut the cooking of the spinach by putting it in ice water, this will fix the color of the leaf at the time of presentation.
