Delicious slices of eggplant with Neapolitan sauce and cheese. A delicious and perfect dish if you want to eat less meat and increase your vegetable consumption. Prepare these rich aubergines and surprise everyone.

Ingredients

4 servings
  • 3 pieces of eggplant
  • 250 grams of mozzarella cheese grated
  • 1 piece of onion finely chopped
  • 2 cups of tomato sauce
  • 1 piece of Red bell pepper
  • to taste of salt and pepper
  • to taste of oregano

    Preparation

    Fry the onion in olive oil.
    Add the tomato sauce and let cook a few minutes.
    Add salt, pepper and oregano to taste.
    Simmer 10 more minutes.
    Slice the aubergines with a thickness of one centimeter.
    Add a little salt.
    Heat a little oil in a pan and fry both sides of each slice of eggplant.
    Add a tablespoon of Neapolitan sauce on top of each slice of eggplant and a little cheese.
    Heat in a pan until the cheese melts. It serves.
