Fry the onion in olive oil.
Add the tomato sauce and let cook a few minutes.
Add salt, pepper and oregano to taste.
Simmer 10 more minutes.
Slice the aubergines with a thickness of one centimeter.

Heat a little oil in a pan and fry both sides of each slice of eggplant.
Add a tablespoon of Neapolitan sauce on top of each slice of eggplant and a little cheese.
