Ingredients

2 servings
  • 2 spoonfuls of oil
  • 1 piece of eggplant medium, cut into unpeeled cubes
  • 1/2 Cup of White onion slice
  • 1/2 Cup of red onion slice
  • 1 clove of garlic finely chopped
  • Salt and pepper to taste
  • 2 teaspoons of parsley chopped
  • 1/2 Cup of tomato puree
  • basil to taste

    Preparation

    Heat the oil in a frying pan and add the eggplant with the onions; cook everything for approximately five minutes; stir very well.
    Add the garlic, season with salt and pepper, sprinkle with basil and add the parsley while stirring.
    Sprinkle with the tomato juice and cook for three minutes over low heat.
