Preparation
Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add onion and garlic and brown for 2-3 minutes. Add the pumpkin flower and cook for 5 minutes or until well cooked. Season with salt and pepper and reserve.
Fill the tortillas with a bit of Oaxacan cheese and pumpkin flower filling. Make the tacos, you can put a toothpick so that the flutes do not fall apart.
Heat oil in a pan and fry the flutes.
