The huitlacoche tacos are a delight. I prepare them with cheese but if you prefer you can remove them and make it just from huitlacoche.

Preparation
Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and garlic and brown for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep dish.
Heat tortillas and fill tortillas with a bit of Oaxacan cheese and huitlacoche filling.
