Ingredients

4 portions
  • 1/4 cups olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon yellow lemon juice
  • 1 shallot, filleted
  • 1 serrano pepper, without veins or seeds, in julianas
  • few table salt
  • ground pepper
  • 1/2 cups arugula baby, washed and disinfected
  • 60 grams Serrano ham
  • 1 cup pitted black olive
  • 200 grams mushroom, crimini
  • to taste parmesan cheese, sliced

Preparation

Mix in a bowl the oil, vinegar, lemon juice, shallot, serrano pepper, salt and pepper; reservation.
Place a bit of arugula in the center of an extended dish and place rolls of serrano ham on top.
Cut the olives and mushrooms into very thin slices.
Arrange them around the plate.
Roll the vinaigrette and finish with slices of Parmesan to taste.
