This recipe for sweet potato puree has no sugar and is a quick accompaniment to any meat, chicken, or fish. The sweet potato is very high in vitamin A and also contains good amounts of potassium.

Ingredients

5 portions
  • 4 sweet potatoes, medium, peeled and cubed
  • 1 tablespoon butter
  • 3 cloves garlic, crushed
  • 1/2 cups milk light
  • 2 tablespoons sour cream, or thick cream
  • salt, and pepper to taste

Preparation

In a large pot, boil the sweet potato in salted water until it is soft. Go through a strainer and reserve.
Melt the butter and cook the garlic until golden brown. Put the cooked potatoes in the pan, add the milk and cream. Season with salt and pepper.
Puree in the same pan or put in a food processor to grind it.

TIPS

You can add a touch of nutmeg and it tastes good.
