The sweet potato is a sugary potato, a vegetable native to Latin America. It is rich in vitamins C, E and iron. It keeps very well in a dry place for several days.

Ingredients

4 servings
  • 3 yellow sweet potatoes
  • 80 milliliters of whipping cream
  • 3 spoonfuls of unsalted butter melted
  • 2 spoonfuls of whiskey or bourbon
  • 1 tablespoon of lemon zest
  • 1 1/2 teaspoons of lemon juice Seedless
  • 1/2 teaspoonful of nutmeg
  • 1 teaspoonful of ground cinnamon
  • 1/2 teaspoonful of ground ginger
  • to taste of Salt

    Preparation

    In an Express® Pressure Cooker over high heat place the sweet potatoes, and cover with water.
    Close the Express® Pressure Cooker and add the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out, lower the flame to medium and cook for 15 minutes.
    Remove the Express® Pressure Cooker from the heat, let it cool, remove the pressure regulator, open the Express® Pressure Cooker and that's it!
    Sweet potatoes should feel soft. Let it cool. Go to a food processor or a blender and process until you get a rustic puree.
    Transfer to a bowl and add the cream and butter, mixing with the help of a spoon until completely integrated.
    Add the bourbon, zest and lemon juice, nutmeg, cinnamon and ginger. Re-mix and season with salt.
    Pour into a soufflé refractory bowl or into several individual bowls. Serve immediately.

    PRESENTATION

    Serve this dish accompanied by a green salad or as a garnish for some Barbecue Costillitas.
