Ingredients

4 servings
  • 4 cloves of garlic unpeeled

  • 1 piece of Turkey 6 kg.
  • 1 piece of onion finely chopped
  • 2 branches of celery chopped
  • 1 piece of carrot chopped
  • 2 1/2 cups of White wine
  • 7 cups of chicken consommé
  • 1 kilo of mushroom sliced
  • 1/3 of Cup of flour

    Preparation

    In a little butter brown the onion and neck, add the celery and carrot and put around the turkey
    Put the garlic to roast with a little olive oil wrapped in aluminum, put them in the processor peeled with the other ingredients and put under the skin of the turkey breast

    Remove the paper and continue varnishing every 30 minutes adding broth and wine until a thermometer reaches 175 ° C, remove and cover with aluminum
    Sauté the mushrooms in butter, add a little of the garlic paste and add the flour.
    Add the chicken broth and turkey juice without the fat, let it thicken and season with salt and pepper

    PRESENTATION

    Serve the turkey with the gravy and garnish with sprigs of rosemary.
