Pumpkin and Prosciutto Rolls with Tomato Sauce

This delicious recipe of pumpkin rolls and prosciutto with tomato sauce is a dish that you will not regret having prepared.

Ingredients

4 portions
  • 3 zucchini, cut into slices
  • 1 tablespoon olive oil
  • 1/8 teaspoons salt
  • 50 grams goat cheese
  • 1 tablespoon parsley
  • 1/2 teaspoons lemon juice
  • 2 cups baby spinach
  • 1/3 cups basil
  • 2 cups tomato puree
  • 200 grams prosciutto

Preparation

Preheat the grill, or a grill pan at medium heat.
Cut the edges of the zucchini and varnish the zucchini slices with olive oil. Sprinkle with salt and pepper.
Put on the grill about 4 minutes per side until smooth.
In a bowl put the goat cheese, parsley, lemon and mix with a fork.
Put a slice of prosciutto, 1/2 teaspoon of the cheese mixture about 2 cm from the edge of the zucchini slice. Put spinach leaves and a leaf of basil girl on top.
Roll up and place the edge down a refractory.
Repeat the same step with the other zucchini slices.
In the holes between the zucchini, pour the tomato puree. Bake at 180 ° C for 15 minutes.
