Prepare this traditional homemade dish that is the perfect garnish for your day to day. The Mexican zucchini take corn and tomato, go with cream and cheese, and are ideal for a taquito with a corn tortilla. Delicious!

Ingredients

4 servings
  • 1 tablespoon of oil
  • 1/4 of Cup of onion
  • 1 clove of garlic finely chopped
  • 3 cups of zucchini in cubes
  • 1 Cup of tomato in cubes
  • 1/2 Cup of whole kernel corn White
  • to taste of sour cream To accompany
  • to taste of fresh cheese To accompany

    Preparation

    Heat the oil in a skillet over medium heat and cook the onion until transparent. Add the garlic and zucchini, cook about 10 minutes.
    Add the tomato and the corn kernels and cook 10 minutes more, until everything is cooked and the pumpkins are soft.
    Season with salt and cook 5 more minutes. Serve with cream and cheese.

    PRESENTATION

    Serve with sour cream and fresh cheese.

    TIPS

    You can mix the cream and the cheese during the cooking so that they are creamy.
