Prepare this traditional homemade dish that is the perfect garnish for your day to day. The Mexican zucchini has corn and tomato, they are accompanied with cream and cheese, and are ideal to make a taquito with a corn tortilla. Delicious!

Ingredients

4 portions
  • 1 tablespoon oil
  • 1/4 cups onion
  • 1 clove garlic, finely chopped
  • 3 cups zucchini, in cubes
  • 1 cup tomtato, in cubes
  • 1/2 cups corn kernel, White
  • sour cream, To accompany
  • fresh cheese, To accompany

Preparation

Heat the oil in a skillet over medium heat and cook the onion until transparent. Add the garlic and zucchini, cook for about 10 minutes.
Add the tomato and corn kernels and cook 10 more minutes, until everything is cooked and the squash is soft.
Season with salt and cook 5 more minutes. Serve with cream and cheese.

PRESENTATION

Serve with sour cream and fresh cheese.

TIPS

You can mix the cream and cheese during cooking to make them creamy.
