In a large skillet, heat a jet of oil over medium-high heat, since it is hot, add the chopped onion. After about 8 minutes (moving from time to time so you do not burn) add the chopped garlic , and fry for 1 minute add the oregano, basil and sugar. After a minute add the chopped tomato and season with salt and pepper. The fire is lowered and let reduce half an hour.
Apart, we mix the bread crumbs with 1/2 cup of grated Parmesan cheese, a pinch of salt and pepper. We passed the chicken fillets through the flour, the beaten egg, and the bread crumb mixture.
Heat oil in a pan and fry the fillets. Apart in a baking dish put a layer of sauce, put the steaks on top and cover them with the mozzarella cheese and then with the rest of the parmesan cheese. And put it in the oven (preheated to 200ºC) (uncovered) for 10 minutes or until the cheese is golden brown.
