Ingredients

4 portions
  • 1 kilo zucchini, medium
  • 1 onion, little
  • 3 cloves garlic
  • 4 tomatoes, ripe or a can of natural tomato chopped 300g
  • 1 can sweet corn
  • 2 tablespoons grated cheese, powdered
  • salt, to taste
  • extra virgin olive oils

Preparation

We wash the courgettes well and slice them with the mandolin or a knife, but without peeling them, with their skin, very finite. We put salt in them and reserve them.
In a saucepan add a little oil and sauté finely chopped finely chopped onion and garlic.
Add the peeled and chopped tomato or the tomato can and let it be done a little.
We toss the zucchini and let them make a few minutes. They have to be done, but "al dente".
We add the drained corn and let it make 1 more minute. We add the grated cheese and mix well.

PRESENTATION

They can be served alone or accompanied by a cut of roasted meat or chicken.

TIPS

Leave zucchini waiting with little salt sprinkled but not much time only while we make the first steps, but can wait to add it at the end. It is optional if you add chopped coriander while cooking the flavor is fabulous too.
