We put the beans in soaking in cold water during the previous night. The next morning we drain them and pour them into a saucepan, along with the whole onion, the whole tomato, the pumpkin cut into pieces, the laurel, the garlic, the parsley, the paprika and the crude oil.
Cover with cold water and put to cook. When it breaks the boil, lower the heat, add the saffron (optional) and let cook slowly, making sure that the beans are always covered with water so that they do not release the skin. Halfway through cooking, we remove the vegetables and pass them through the masher and the fine Chinese colander forming a cream that we will add to the beans.
Once the beans are tender, season and let them continue to cook very slowly. Remove from heat and let stand, covered, about ten minutes before serving.
