Enjoy this traditional white rice with corn and chile poblano, besides being a very rich recipe, you will be surprised how easy it is to prepare it, and the best thing is that you can use it as a garnish for any dish. It is spongy and piscosito.

Ingredients

4 servings
  • 2 cups of chicken soup
  • 1 clove of garlic
  • 1/4 of onion
  • 2 tablespoons of oil
  • 1 cup of rice rinsed and soaked in hot water
  • 2 poblano peppers clean, deveined and cut into slices
  • 1 cup of whole kernel corn
  • 1/8 of bunch of fresh coriander
  • to taste of salt

Preparation

Blend chicken broth with garlic and onion. Reservation.
Heat the oil over medium heat, add the rice and fry for 7 minutes or until lightly browned.
Add corn kernels, chile poblano slices, chicken broth, cilantro, season with salt.
Cover and cook for 15 to 20 minutes over medium heat.
