Ingredients

4 servings
  • 3 pieces of egg white
  • 2 egg yolks
  • 60 grams of Butter , a little more for the ramequines
  • 1/4 of Cup of flour
  • 3/4 of Cup of milk
  • 15 grams of sugar , a little more for the ramequines
  • 30 milliliters of espresso coffee
  • 2 spoonfuls of coffee liqueur
  • 100 grams of bittersweet chocolate
  • 200 milliliters of whipping cream
  • 2 spoonfuls of powder sugar
  • 2 spoonfuls of cocoa

    Preparation

    Preheat the oven to 200 ° C.
    Melt the butter and add the flour. Add the milk and move until there are no lumps.
    Add sugar, espresso and semi-bitter chocolate. Remove from heat and add the yolks and coffee liqueur.
    Beat the whites until firm peaks are obtained and incorporate them in an enveloping way.
    Cover the ramekins with butter and a little sugar on top. Pour the soufflé mixture into each one. Bake at 200 ° C for 15-20 minutes.
    Decorate the soufflés with the cream to beat and sprinkle cocoa on top. Place coffee beans on top to decorate and serve.

    TIPS

    If you do not get ramequins (special molds) use a mold with straight walls to help the soufflé grow and stay right.
