1. Heat the oven to 180 ° C.
Grease 4 ramekins with butter and cover with a thin layer of sugar, stirring the excess.

Pass the mixture through the strainer and remove the seeds.
In a bowl, mix the yolks, with 70 grams of sugar and cornstarch, until it becomes a light yellow color. Add the red fruit puree and the lemon juice.
In another bowl, beat the egg whites, cream the tartar, salt and whisk until it is frothy. Add the 30 grams of sugar and increase the speed little by little.
Integrate a little of the mixture of whites to the yolks, then add the rest in an enveloping way.
Pour the mixture into the center of the ramekins and alias the surface with a spatula and clean the edges.
Bake for 16 to 20 minutes, or until the surface is golden brown. Sprinkle the icing sugar, decorate with fresh fruits and serve immediately.
