Preparation
Pre-heat the oven to 400 degrees Fahrenheit. Separate the yolks from the white.
In a bowl mix the yolks and Maple until they are incorporated.
In another stainless steel bowl, begin to beat the whites until soft peaks form, once that happens add the mixture of the buds and the Maple in an enveloping way.
Empty the mixture into 4 Souffle molds and place them on a baking sheet, then bake them in the oven and immediately reduce the temperature to 375 degrees Fahrenheit. Leave them in the Oven for 10 minutes or until they are inflated.
