What better than to spoil your family with a delicious and warm soup. Therefore, we present this recipe for Bean and Noodle Soup and Bean, has a better flavor if you add oregano, epazote and chorizo. Try to add a little more broth while cooking so that the soup does not thicken too much and serve with fresh cheese, chorizo and avocado.

Ingredients

4 servings
  • 2 pieces of tomato poached
  • 2 cloves of garlic roasted
  • 1/4 of piece of onion
  • 1 Cup of beans soup for the pot
  • 1 Cup of bean for the pot
  • 1 tablespoon of oregano
  • 3 pieces of pasilla chili pepper soaked and washed
  • enough of epazote
  • 1 pinch of salt and pepper
  • 1/2 Cup of sausage
  • 1 Cup of noodle
  • 1 Cup of chicken soup
  • 1/4 of Cup of fresh cheese to decorate
  • 4 spoonfuls of pasilla chili pepper sliced and fried, to decorate
  • 1/4 of piece of avocado cut in a fan, for decoratiion

    Preparation

    For the stew, mix the tomato with the garlic, onion, beans from the pot, the bean broth, the oregano, the pasilla chili, the epazote, the salt and the pepper until you get a homogeneous sauce.
    Heat a small pot over medium heat and cook the chorizo until you release the fat, remove and reserve. Fry the noodles until golden brown in the fat from the sausage.
    Add the chicken stock, cook for 10 minutes, add the bean broth and a little more epazote, cook until the noodle is fully cooked.
    Serve the soup in deep plates accompanied with the chorizo, the fresh cheese, the fried pasilla chile slices and the avocado.

    PRESENTATION

    Serve with fresh cheese, cilantro, pasilla chili and avocado.

    TIPS

    You can add a little more broth while cooking so that the soup does not get too thick.
