The dry bean soup is a very healthy option that is cooked with chilies, garlic, cumin and a little cactus is added so as not to lose the yellow color very characteristic of the soup. It can be accompanied with fried pasilla chili strips and fresh tomato cubes.

Ingredients

  • 1 Cup of bean dry
  • 4 liters of Water
  • 2 spoonfuls of olive oil
  • 1/2 Cup of onion finely chopped
  • 2 spoonfuls of Garlic finely chopped
  • 1 Cup of tomato finely chopped
  • 2 cups of nopal cut into cubes or strips
  • 2 spoonfuls of coriander chopped
  • 2 spoonfuls of Salt
  • to taste of nopal cut into strips and cured, to accompany
  • to taste of pasilla Fried cut into rings to accompany
  • to taste of Corn tortillas in fried strips, to accompany
  • to taste of tomato cut into cubes, to accompany

    Preparation

    Cook the beans with the water and a little salt in a pressure cooker for 30 minutes until they are soft. Reserve with everything and liquid.
    Heat a pot over medium heat with the oil, fry the onion, garlic, tomatoes, add the beans with everything and broth, the nopales, the cilantro, season with salt to your liking, cook 25 minutes more, cover until the beans fall apart and the soup thickens.
    Serve the soup in soups and decorate with a little pickled nopalitos, fried pasilla chili, tortilla strips and tomato. Enjoy

    TIPS
