Preparation
Wash and remove any traces of dirt that may have adhered, boil the beets with the onion in salted water.
Remove when they are tender (reserve the boiling water), peel and blend with part of the cooking water and onion, pour everything together with the rest of the broth where they were cooked.
Add the lemon juice, sugar and salt to taste, mix and put to heat.
Serve hot or cold with a spoonful of sour cream, exquisite.
