Give your broccoli cream a detox touch with this easy recipe thanks to the Bits de Broccoli Eva®, which will help you have a healthy option on your weekly menu. This cream is perfect as a light meal and its flavor is a delicious combination. Enjoy consuming it hot.

Ingredients

4 portions
  • 2 tablespoons coconut oil
  • 1/2 cups onion, in medium squares
  • 1 clove garlic, finely chopped
  • 3 cups broccoli Eva® bits, 454 g
  • 1 cup vegetable broth
  • 2 cups almond milk
  • 1/2 tablespoons cornstarch
  • 2 black pepper
  • 1/4 cups coriander leave
  • 1 tablespoon coconut oil
  • 1/4 cups almond, chopped
  • to taste salt
  • enough almond, chopped, for garnish
  • enough olive oil, to decorate
  • enough chives, finely chopped

Preparation

In a saucepan over medium heat, melt the coconut oil and sauté the onion and garlic until the color of the vegetables turns bright. Then add the Broccoli Eva® Bits, pour in the vegetable broth and lower the heat; cook 6 minutes or until the broth comes to a boil. Remove from heat.
Blend the previous mixture with the almond milk, cornstarch, whole pepper and coriander until completely integrated.
In a saucepan over low heat, heat the coconut oil and toast the chopped almonds, stirring constantly with a spoon. Once the almond turns a more golden color, pour the smoothie through a strainer and add the Bits of Broccoli Eva® that you reserved. Season with salt and cook for 8 minutes over medium low heat.
Serve hot in a bowl or soup plate. Garnish with chopped almonds, olive oil and chives.

TIPS

Remember to cook the Broccoli Eva® Bits on low heat to avoid overcooking the vegetable.
