Ingredients

4 servings
  • 1/2 Cup of almond
  • 700 grams of broccoli
  • 3 3/4 cups of chicken soup
  • 1 1/4 cups of fat free skim milk
  • black pepper

    Preparation

    Preheat oven to 180 degrees.
    Arrange the ground almonds in a well-spread baking tray. Bake for 10 minutes until golden brown (eye! Burn fast, watch!)
    Remove the almonds from the oven and reserve 1/4 of the almonds to decorate.
    Cut the broccoli into small pieces and steam for 7 minutes, until smooth.
    Put the toasted almonds, broccoli, milk and a part of the chicken broth in the food processor (or blender). Process until it has a smooth texture.
    Season with salt and pepper.
    Return to the pan and warm. Add the rest of the chicken broth to the desired consistency.
    Put the soup in the bowls and sprinkle with the reserved almonds.
