Preparation
Sauté the carrot and the leek in a few drops of canola oil.
When they are cooked add water, the fish trimmings, salt, bay leaf, coriander, black pepper and allspice, chipotle.
Cook for 15 minutes.
Remove the peppers. And if you wish, you can add tomato, nopal and heat for 1 more minute.
Serve with lemon and tortilla chips.
Garnish with coriander leaves.
