The mole de olla is a typical dish of central Mexico, where the meat is cooked with pasilla pepper sauce. It is accompanied by vegetables such as carrot, squash, potatoes, green beans and corn. This combination of ingredients will have the perfect flavor. Do not forget to add xoconostle that will give you the final touch.

Ingredients

6 servings
  • 1/4 of Cup of oil
  • 6 cloves of garlic
  • 1/4 of piece of onion
  • 4 pieces of tomato
  • 10 pieces of pasilla chili pepper clean and seedless
  • 6 cups of Water
  • 1/2 bunch of epazote
  • 1 tablespoon of oil
  • 4 liters of Water
  • 3 pieces of corn cut in 3
  • 1 kilo of beef chambarete, without bone
  • 1 piece of marrow 100 g
  • 1 clove of garlic
  • 1 Cup of onion in pieces
  • 1 tablespoon of Salt
  • 2 pieces of carrot cut into long pieces
  • 1 piece of chayote squash cut into large cubes
  • 1 piece of potato cut into large cubes
  • 1/4 of Cup of green bean cleansed
  • 4 pieces of xoconostle bare
  • 2 pieces of pumpkin cut in half moons
  • 1 pinch of Salt
  • enough of tortilla To accompany

    Preparation

    Over medium heat, fry the garlic cloves, onion, tomatoes and the pasilla chilies. Fill with water and add the epazote.
    Cook and blend.
    Empty the sauce and fry with oil for 10 minutes.
    Fill a pot with water and put into it the beef shank, bone marrow, the corn cubs, garlic, onion and salt. Cook for an hour and withdrawing the foam from the broth.
    Add the staind sauce into the pot and cook for some minutes.
    Add the vegetables and cook until they are soft. Serve.
    Enjoy!

    PRESENTATION

    Serve the soup with the vegetables and tortillas.

    TIPS

    The marrow gives a lot of flavor to the broth because of its high fat content. You can skip it if you do not like it.

    No menciona las bolitas de maíz. 2 veces dice añadir ajo pero no dice cuánto se pone cada vez. Trrrible traducción al inglés. Que quiere decir Xoconostle BARE? Peeled?
