It is a delicious and economical soup, simple to prepare and has a lot of flavor. It is a very complete dish because apart from the meat it has potatoes and peas. Try it!

Ingredients

6 portions
  • 500 grams beef belly, or tripe, finely chopped
  • 8 cups Water
  • 3 tablespoons onion, finely chopped
  • 4 tablespoons fresh coriander, chopped
  • 200 grams pea, or peas, cooked
  • 1/4 cups tomato, chopped
  • 2 cups White potato, chopped into cubes
  • 1 cup yellow potato, chopped into cubes
  • 1/2 teaspoons saffron
  • 2 cubes chicken consommé
  • to taste salt

Preparation

Cook in a pressure cooker the tripe with enough water for one hour, until it softens and drains the water and reserves the tripe.
Boil the 8 cups of water; Add cubes of chicken broth, onion and saffron, potatoes, peas and cooking for 20 minutes. Then add the tripe and let it cook over medium heat for 20 more minutes so that the soup gets the desired texture.
Finally add the chopped coriander and serve hot.

PRESENTATION

Decorate the plate with avocado strips and a sprig of cilantro and accompany with a banana or a few drops of lemon.

TIPS

To avoid the strong smell of the callus when cooking it, add a sprig of thyme and basil to the water from the first cooking.
