Nothing like a little hot stew! We give you this delicious Beef Soup Recipe that is typical of the North and South of Mexico, as depending on the region they change the ingredients, but in the end it is still an exquisite preparation. This Beef Soup Recipe is made with beef stew and bone marrow along with vegetables. A great tip so that you should not overcook the vegetables, avoid this by adding them little by little: preferably beginning with that which needs cooking the longest. Without a doubt, this easy soup recipe will become one of your family's favorite dishes.

Ingredients

8 portions
  • 4 liters water
  • 1 onion, cut in halves
  • 6 cloves garlic
  • 2 kilos beef shank, beef
  • 2 kilos beef bone marrow, chopped up
  • 1/4 cups fresh coriander
  • salt
  • 2 ears corn, cut into three parts
  • 1 potato, cut into cubes
  • 2 carrots, cut into slices
  • 2 chayotes, cut into cubes
  • 1 cup green bean, washed
  • 2 pumpkins, cut into slices
  • 1/4 cups peppermint
  • 1 serrano chile, cut into slices

Preparation

Heat a large pot over medium heat with the water, add the onion, garlic, pot, marrow, cilantro, salt and cook for 1 hour or until the meat is almost done.
Add the vegetables in the order indicated first the corn, potatoes, carrots, chayote, green beans, cook 10 minutes, add the squash, mint and cook until the vegetables are cooked. Serve with slices of serrano pepper. Enjoy with warm tortillas.

PRESENTATION

Serve in a deep dish.

TIPS

Remember that vegetables have different cooking times, some are ready and done before others. Do not add them all at the same time, always start with the slowest to cook with the fastest to prepare, the last.
