With this soup recipe, you can enjoy an excellent option of non-spicy and very nutritious pot mole for children, or for those at home who do not eat spicy. We present you a very easy recipe, full of vitamins and flavor. This white pot mole is a broth that will cure you raw with its delicious flavor and that will go perfectly well accompanied by handmade tortillas and lemon.

Ingredients

8 portions
  • 1 kilo beef shank, boneless, cut into chunks
  • 1/2 white onions
  • 1/2 heads garlic
  • salt
  • 2 ears corn, cut into thirds
  • 1 cup potato, cut into cubes
  • 1 cup carrot, sliced
  • 1 cup chayote, diced
  • 1 bunch epazote
  • 1 cup green bean
  • 1 cup cabbage, cut into strips
  • 1 cup pumpkin, diced
  • 1 bunch coriander
  • lime

Preparation

In a pot over medium heat heat water, add the shank, marrow, white onion, garlic, season with salt and cook until the meat begins to release impurities (foam). With the help of a spoon, remove all the impurities and continue cooking for 30 more minutes.
Add the pieces of corn and cook for 20 minutes, then the potatoes, the carrot, the chayotes, the epazote and cook for 15 more minutes. Add the green beans, the cabbage, the pumpkin, the bunch of coriander and cook until it softens.
Serve hot, accompanied by tortillas and lemons.

In a deep plate, accompanied by handmade tortillas and lemons.

TIPS

The marrow gives a lot of flavor to the broths, although if you want an option without a lot of fat, do not add it. It is important to cook your vegetables from the ones that take the longest to the ones that take less time so that they don't overcook.
