Ingredients

6 portions
  • 2 teaspoons olive oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups celery, finely chopped
  • 1/2 cups green bell pepper, diced
  • 1/2 cups carrot, diced
  • 2 cups cabbage, cut into strips
  • 1/2 cups tomtato, diced
  • 1 cup mushroom, filleted
  • 8 cups chicken soup, defatted
  • pinches salt and pepper
  • to taste fresh coriander, to decorate

Preparation

Heat a saucepan over medium heat with the oil, cook the onion, garlic, celery, green pepper, carrot and cabbage. Cook for 5 minutes.
Add the tomato and mushrooms, cook for a few minutes and pour in the chicken broth, season with salt and pepper, cook for 20 minutes over medium heat.
Serve hot in a deep plate and garnish with cilantro.

PRESENTATION

On a deep plate, decorated with coriander.

TIPS
