Chayote Squash and Corn Soup

As a complement to any meal of the week, you can prepare this recipe for Chayote Squash and Corn Soup, which is ideal for children to eat vegetables in a different way. Remember that creams can be cooked with water or milk, depending on how thick you like it.

Ingredients

4 servings
  • 1 tablespoon of Butter
  • 1/4 of piece of onion chopped
  • 1 clove of garlic
  • 1 Cup of corn
  • 2 pieces of chayote squash peeled and cut into pieces
  • 1/4 of Cup of almond filleted
  • 1 Cup of milk
  • 1 Cup of evaporated milk
  • 1 Cup of chicken soup
  • 1 branch of epazote
  • 1 sheet of laurel
  • 1/4 of Cup of coriander bleached
  • enough of salt and pepper
  • enough of corn to decorate
  • enough of almond toast, to decorate
  • enough of epazote to decorate

    Preparation

    Melt the butter in a pot and cook the onion with the garlic. Add the corn, the chayote squash, the sliced almonds and cook until the chayote softens. Add the milk, the evaporated milk, the chicken broth and the epazote, when the first boil add the bay leaf. Cook for 20 minutes.
    Blend the above with the cilantro until a obtaining a cream texture and strain the soup, if necessary.
    Return the soup to the pot, let it boil and season.
    Serve hot, decorate with corn, toasted almonds and epazote.

    PRESENTATION

    Serve hot, garnish with corn and toasted almonds.

    TIPS

    Cilantro, in addition to color, adds a lot of flavor to the soup. The more cooked the vegetables are, the smoother they will be.
