Ingredients

4 portions
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 potato, cut into cubes
  • 2 cups asparagus
  • 1/4 onions, cut into cubes
  • 4 cups Vegetables soup
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • to taste croutons, To accompany

Preparation

In a pan over medium heat heat the olive oil, add the potato and cook for 5 minutes until smooth.
Add the asparagus, garlic, onion, and cook for 5 more minutes.
Blend for 3 minutes with the vegetable broth.
In a saucepan over low heat heat the oil, pour the previous preparation, season with salt and pepper and cook for 10 minutes until it thickens slightly.
Serve hot with croutons and asparagus.

On a soup plate accompanied by bread
