Cream of Mushroom with Brandy with Fried Yellow Onion

Prepare this cream of mushrooms to start any meal. Add fried onions, to give it that crispy and unexpected texture. It will be the difference of all your meals. It is an exquisite cream!

Ingredients

4 portions
  • 2 tablespoons butter
  • 1 yellow onion, cut into thin slices
  • 4 tablespoons brandy
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 can cream of mushroom, Campbells® (430 g)
  • 1 cup Water
  • 1 cup milk
  • 4 teaspoons chives, finely chopped

Preparation

In a small pot heat over low heat the butter. Add the onion and cook for 5 minutes.
Add the brandy and cook until reduced to ¾ parts to evaporate the alcohol.
Salt and pepper over medium heat, add Campbells® champignon cream, water and milk. Mix perfectly and let boil for 5 more minutes.
Serve in a bowl and decorate with the onion.

PRESENTATION

Serve in a bowl and add a little finely chopped scallion.

TIPS

Take care not to boil much to prevent it from thickening too much.
