Ingredients

2 portions
  • 1 tablespoon olive oil
  • 1 cup onion, cut into cubes
  • 1/2 cups leek, chopped
  • 1/2 cups celery, chopped
  • 3 cloves garlic, chopped
  • 2 cups mushroom, cut in quarters
  • 1 cup oyster mushroom, chopped
  • 1 cup walnut
  • 2 cups vegetable broth
  • 2 cups whipping cream
  • 3 tablespoons butter
  • 2 cups mushroom, cubed in cubes
  • 1 pinch salt
  • 1 pinch white pepper
  • enough bread, in croutons, to serve
  • enough goat cheese, to serve
  • enough fresh thyme, to serve

Preparation

Heat a small pot over low heat with the oil and cook the onion with the leek, celery and garlic until they have a bright color. Add the mushrooms, pecans and cook until the juices are released.
Add the vegetable stock, cook for 10 minutes and remove from cooking. Chill lightly, blend with the cream to obtain a homogeneous mixture.

PRESENTATION

Place the crouton large enough in the mouth of the soup bowl in the center, decorate the goat cheese crouton and fresh thyme.

TIPS

Don't overcook the cream when you already have the whipping cream, because if you leave it a long time simmering the cream will curdle. Place your cut croutons in the oven with a little butter and garlic powder so they have more flavor.
