Ingredients

40 portions
  • 1 teaspoon sugar
  • cayenne pepper
  • 90 grams cream cheese, (1 pack) at room temperature
  • 1 can evaporated milk, or 1/2 cup of milk cream
  • 1 can red pepper, roast
  • 2 cloves garlic, finely chopped
  • 2 teaspoons fresh thyme
  • 1 teaspoon salt
  • croutons
  • 4 cups vegetable bouillon

Preparation

In a saucepan melt the sugar and half a cup of vegetable broth. Season with cayenne pepper, leave over medium heat until it is integrated.
Add the cream cheese and evaporated milk into the blender, add the canned peppers (or roasted peppers if you can not find them) and the chopped garlic . Blend until a homogeneous cream is formed.
Pour the mixture into the pot, add the rest of the vegetable broth. Stir, let it break the boil and rectify the seasoning with salt and thyme.

PRESENTATION

Presents with a little cream to the center and thyme leaves, basil and bread croutons.

TIPS

If you want a thicker or concentrated consistency add a can more peppers and cream instead of evaporated milk.
