Preparation
In a saucepan over medium heat melt the butter and brown the garlic, onion and huitlacoche for 2-3 minutes.
Add the chicken broth and the epazote and let the huitlacoche cook over medium heat, about 20 minutes or until the grain releases juice.
Remove from heat and add cream.
In small pots, mix the soup perfectly and return to the pot. Season with salt and pepper and warm before serving.
