Ingredients

4 portions
  • 2 tablespoons butter
  • 1/2 onions, chopped
  • 1 clove garlic, chopped
  • 1 cup poblano pepper slice
  • 3 cups spinach
  • salt and pepper
  • 2 cups evaporated milk
  • 1 cup whipping cream
  • 1 cup chicken broth
  • 1 tablespoon oil
  • spinach, fried, to decorate
  • poblano rajas, to decorate
  • Cotija cheese, to decorate
  • tortilla, fried, cut in julienne to decorate

Preparation

In a saucepan over medium heat, melt the butter and sauté the onion and garlic. Add the slices and spinach, cook 5 minutes and season with salt and pepper.
Add the evaporated milk, the whipping cream and the chicken broth. Bring it to a boil and cook about 10 minutes covered. Remove from heat and cool slightly.
Blend the previous preparation and strain if necessary. Return the mixture to the saucepan and cook 10 more minutes.
Serve the cream with fried baby spinach, poblano slices, Cotija cheese and fried tortilla strips.

PRESENTATION

Serve the soup hot with fried spinach, chile poblano slices, fried corn tortilla strips (julienne cut) and cotija cheese.

TIPS

You can remove the poblano chile from the recipe if you don't like the spicy touch.
