Prepare this delicious Tarascan Soup from Pátzcuaro, Michoacán. It is made with beans, tomatoes and corn tortillas. Ingredients

2 servings
  • 1/2 piece of onion cut in eighths
  • 1 clove of garlic cut into pieces
  • 2 pieces of tomato cut into cubes
  • 1 Cup of bean Cooked
  • 1 Cup of chicken soup
  • 2 pieces of pasilla chili pepper clean, soaked and seedless
  • 2 cups of chicken soup
  • 2 leaves of dry laurel
  • 1 teaspoonful of thyme
  • 1 teaspoonful of marjoram
  • enough of oil
  • 1 Cup of Corn tortillas cut into strips
  • 1/2 Cup of ancho chili pepper cut into thin strips
  • enough of sour cream for serving
  • enough of fresh cheese crumbled, to serve
  • enough of avocado for serving

    Preparation

    Heat a comal over high heat and roast the onion, garlic, tomato. Remove.
    Blend the ingredients you previously cooked with the beans, the bean broth, the pasilla chili, the chicken broth, the bay leaf, the thyme and the marjoram until you get a homogeneous mixture.
    Heat a frying pan with a little oil and cook the previous preparation until it is cooked.
    Heat a skillet over medium heat with the oil, fry the tortilla julienne until crispy, remove from the oil and place on absorbent paper. Fry the ancho chile strips without burning them, repeat the same process and reserve.
    Serve the soup in a deep dish, add the sour cream, the fried tortilla strips, the fried wide chili, the fresh cheese and the avocado. Enjoy

    PRESENTATION

    Serve the preparation with the tortilla julianas, the chile anchos, sour cream and fresh cheese, and a little avocado.

    TIPS

    Take care that when you fry the chili, do not burn it too much so it will not make your preparation turn bitter.
