The fabada is the traditional stew of Asturian cuisine made with white beans, sausage and a mixture of tenderloin and blood sausage. It is served as a main course in the food because it can fall a little heavy.

Ingredients

8 portions
  • 2 serrano ham bones
  • paprikas
  • 3/4 kilos pork tenderloin
  • 1/4 kilos loin sausage
  • 1 slice bacon, cut in pictures
  • 1 slice Serrano ham, 2 cm thick in squares
  • 2 blood sausage rice
  • 3 Spanish chorizo sausage
  • 2 cloves garlic
  • 1 onion, big
  • 3 tomatoes, big
  • 3/4 beans

Preparation

One day before, put to soak the beans in water. The next day, drain and cook in an express pot without salt.
Fry the onion in olive oil and add the grated garlic, the roasted tomato, peeled and minced. Cook until the flavors are incorporated.
In a different pot, fry the meats in pieces in a little olive oil. Add the sausages, sliced ​​black pudding, bacon and ham. Let cook 5 minutes and add to the tomato and onion mixture.
Add the beans and ham bones to the pot and season with salt and pepper. Let cook 20 minutes over low heat and let it thicken. Serve hot.

PRESENTATION

Serve in a clay pot like the one in the photo.

TIPS

You can add a little bit of chile pasilla milled if desired.

Excelente receta! Yo le hice algunas modificaciones como agregar salchicha polaca y chuleta de cerdo ahumada con hueso ademas de un pcoo de paprika para dar color y sabor y el tomate lo licue. A la familia le gusto mucho!

Muy buena ,les platico yo le agrego salchicha de res, garbanzo,chile ancho y chile pasilla,chile guajillo,chuleta ahumada.pero esto es por gustos y créanme nunca han probado tal manjar

Queda muy rico! Usa ingredientes de buena calidad para que quede rico. Si no te da tiempo de remojar antes las fabrs ponlas a hervir un minuto en agua. Apaga el fuego y déjalas remojar 1 hora.
