The fabada is the traditional stew of Asturian cuisine made with white beans, sausage and a mixture of tenderloin and blood sausage. It is served as a main course in the food because it can fall a little heavy.

Preparation
One day before, put to soak the beans in water. The next day, drain and cook in an express pot without salt.
Fry the onion in olive oil and add the grated garlic, the roasted tomato, peeled and minced. Cook until the flavors are incorporated.
In a different pot, fry the meats in pieces in a little olive oil. Add the sausages, sliced black pudding, bacon and ham. Let cook 5 minutes and add to the tomato and onion mixture.
Add the beans and ham bones to the pot and season with salt and pepper. Let cook 20 minutes over low heat and let it thicken. Serve hot.
