Preparation
Cut the cauliflower into 1 centimeter pieces. Heat the olive oil in a skillet over medium heat. Add the onion until translucent, moving occasionally, about 5 minutes.
Add the cauliflower and salt, cover the pan and cook for another 5 minutes. Add the water, cover and wait for it to boil. Cook another 15 minutes more, until the cauliflower is soft.
Put everything in the blender and puree. Return the soup to the pot and add the sour cream and nutmeg. Season with salt and freshly ground pepper. Serve hot.
