Yucatecan Mexican stew for those cold nights and raw mornings. The little one is a dish that can not miss in all the national holidays.


10 portions
  • 1 kilo beef tripe
  • 1 branch peppermint
  • 4 guajillo chilies
  • 2 cloves garlic
  • 3 onions
  • 1 kilo lemon, to taste
  • 4 ladles salt, to taste
  • 1 Dried oregano
  • 1 kilo tortilla


Heat in an express pot or in a saucepan water until it starts to boil. Place the beef belly (small) in pieces inside when the water is ready. (About three quarters of water and the rest of the belly)
Place one onion and half parted in the boiling water along with the belly. Also the salt and the sprig of mint.
While the meat is cooked with the onion, in another bowl, heat the water with the four guajillo chiles until they become tender.
Remove the branches when the chiles are ready and liquefy them together with the water in which they were cooked. Strain the mixture on the beef belly inside the pot. Take care that no seeds fall or anything else than liquefied chili.
When the menjurje is boiling, lower the flame and take care of the little one, stirring every so often.


Chop the remaining onion and serve to taste with this, split lemons and oregano. Highly recommended tortillas made by hand (and if there is not, then from the tortilla shop, Eda?)


So that the little one stings, to use chili of toreado tree and to liquefy it with the guajillos chiles. To taste, too.
