Yucatecan Mexican stew for those cold nights and raw mornings. The little one is a dish that can not miss in all the national holidays.

Ingredients

  • 1 branch of peppermint
  • 4 guajillo chili peppers
  • 2 cloves of garlic
  • 3 onions
  • 1 kilo of green lemon to taste
  • 4 ladles of Salt to taste
  • 1 Dried oregano
  • 1 kilo of tortilla

    Preparation

    Heat in an express pot or in a saucepan water until it starts to boil. Place the beef belly (small) in pieces inside when the water is ready. (About three quarters of water and the rest of the belly)
    Place one onion and half parted in the boiling water along with the belly. Also the salt and the sprig of mint.
    While the meat is cooked with the onion, in another bowl, heat the water with the four guajillo chiles until they become tender.
    Remove the branches when the chiles are ready and liquefy them together with the water in which they were cooked. Strain the mixture on the beef belly inside the pot. Take care that no seeds fall or anything else than liquefied chili.
    When the menjurje is boiling, lower the flame and take care of the little one, stirring every so often.

    PRESENTATION

    Esta delicioso!!!! Les recomiendo que le pongan 8 chiles guajillo en vez de 4 para que salga mas rojo el caldo y se pruebe el sabor del chile.

    A través de iOS Este estilo si se parece a como lo preparan aqui en Guadalajara! solo le agregaria para el acompañamiento, aparte de las tortillas y limon al gusto: cebolla finamente picada al gusto y unos chiles secos de arbol freidos en aceite! yomi!
