Preparation
Cook the angel hair pasta La Moderna® for 8 minutes in a saucepan with 2 liters of boiling water, adding salt to taste, two tablespoons of oil and three bay leaves. Drain the pasta and reserve.
Heat a saucepan, pour three tablespoons of canola oil and sauté the onion until it looks translucent.
Add the mushrooms to the onion sauce and season.
Add the squash to the sauce and season.
Add to the sauce the jalapeño peppers and season.
Add the pieces of pumpkin flower and corn kernels to the stir-fry, sprinkle the tablespoon of chicken broth powder and season.
Once the ingredients of the mixture are seasoned, add the chicken broth and the epazote branch, keeping on medium heat until all the vegetables are cooked.
Finally, the pasta fideo Cabello de Ángel La Moderna® is added and it is integrated with the sofrito, until it is seasoned as a whole.
