Nothing better than a warm soup and also easy to prepare! Follow this recipe of Rajas and Corn Soup made with poblano chili pepper with white corn and a delicious tomato sauce.

Remember that dried poblano chile is known as ancho chile and is used for countless sauces and recipes for Mexican food, but you can also prepare it in soup and it will have a spicy flavor.

Ingredients

4 servings
  • 2 spoonfuls of Butter
  • 1/4 of piece of onion finely chopped
  • 1 Cup of corn kernels
  • 3 pieces of rajas poblanas
  • 1 piece of tomato ground
  • 1/4 of Cup of tomato puree
  • 6 cups of chicken soup
  • enough of Salt
  • enough of black pepper
  • 4 pieces of Corn tortillas in strips and fried, to decorate
  • 4 spoonfuls of Panela cheese in squares, to decorate

    Preparation

    Melt the butter in a pot and cook the onion and corn for 5 minutes. Add the poblano pepper, the ground tomato, the tomato puree, the chicken broth, the salt and the pepper. Cover and cook for 20 minutes.
