This rich cream of potato and pore is accompanied by smoked salmon and decorated with chives.

Ingredients

8 portions
  • 1 kilo potato, cut into cubes
  • 2 leeks, large cubed
  • 4 tablespoons unsalted butter
  • 1 liter chicken soup
  • 100 milliliters whole milk cream
  • 200 grams smoked salmon, cut into strips
  • 1 bunch chives, chopped to decorate

Preparation

In a saucepan, melt the butter over medium heat. Add the pore and cook over low heat for 10 minutes or until the pore is soft.
Add the potato and mix. Add the chicken broth and the cream and turn the heat to medium, cook for 10 minutes or until the cream starts to boil.
Cover the pot and let the soup cook for 15 minutes or until the potato is well cooked.
Add 2/3 of the salmon and mix. Season with salt and pepper.

PRESENTATION

Serve the soup in bowls and add 2-3 strips of smoked salmon and a little scallion on each plate to decorate.

TIPS

If you want to make the soup in advance you can freeze it after step 3. At dinner time just thaw the soup, heat it and finish with step 4.
