In these national holidays take the opportunity to prepare the traditional Jalisco pozole that is delicious. This popular broth made from a mixture of peppers, corn and pork will be the star dish of the night. Accompany it with onion, lettuce, radish, oregano and corn toast with cream.

Ingredients

8 servings
  • 4 cups of cacahuazintle corn precooked
  • 1 garlic medium head
  • 1/2 onion
  • 2 spoonfuls of Salt
  • 500 grams of pork meat solid
  • 2 pig trotters
  • 2 spoonfuls of lard for the sauce, divided
  • 5 chile de árbol peppers deveined for the sauce
  • 5 pasilla chili peppers deveined for the sauce
  • 5 ancho chili peppers
  • 2 spoonfuls of Salt
  • 1 lettuce finely chopped to accompany
  • 4 onions finely chopped, to accompany
  • 20 radishes
  • 2 spoonfuls of ground oregano To accompany
  • 8 green lemons
  • 8 fried or toasted corn tortilla
  • 1/2 Cup of sour cream

Preparation

In a pot with water over high heat, boil the corn with the garlic, the onion and the salt the meat and the handyman. Cook until the meat is soft and the grain bursts. About 1 hour.
For the sauce, fry the chiles with a tablespoon of butter until they release the aroma. Soak them in hot water for 15 minutes until they are soft, and blend together with a little of the soaking liquid until you get a homogeneous sauce.
In a pot, heat the rest of the butter over medium heat and fry the sauce 5 minutes. Add half of the sauce to the corn and meat mixture, let it boil and simmer for 20 more minutes. Season with salt.
Serve the pozole and accompany with lettuce, onion, radish, oregano, lemon, toast with cream and the rest of the sauce.
