The stew is a stew of meat and vegetables in a beef broth. That soup is a complete meal and is served with fresh tortillas and a spicy sauce.

Ingredients

8 portions
  • 1 1/2 kilos flank steak, cut into cubes of 4 cms
  • 12 cups Water
  • 300 grams beef shank with bone
  • 2 corn, matches in 4 pieces
  • 3 tomatoes, poached and seedless
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 pinch cumin
  • 1 tablespoon vegetal oil
  • 2 shitakes mushrooms, cut into medium cubes
  • 3 zucchini, cut into wheels
  • 3 carrots, cut into wheels
  • 2 potatoes, cut into medium cubes
  • 120 grams green bean, matches in halves
  • lemons, at your service
  • black pepper

Preparation

In a deep pot put the water to heat.
When it boils, add the meat and cook until it boils.
Add salt and split corn, cover the pot. Cook for 40 minutes over medium heat.
In the blender, grind the tomatoes, onion, garlic and cumin (add a little water too).
Heat a pan over medium heat and sauté the tomato with the oil for about 5 minutes.
Once the meat is cooked, add the tomato sauce (previously seasoned).
Leave the heat low and add the chayotes, zucchini, carrots, potatoes and green beans.
Rectify the salt and pepper and add a few drops of lemon juice.

PRESENTATION

Decorate each dish with sprigs of coriander.

TIPS

Serve with corn tortillas, white rice, a spicy sauce and lemons.

por fin estuve buscando esta receta xq mi papá me dijo que era muy rico creo que es un chilposo de res pero sin chile ;)

Muy buena Muy buena, en mi estado también se acostumbra a ponerle "macal", "yuca" y "malanga", y queda muchiiisimo maas rico de lo que ya es. Además he visto quien le pone hojas de col. Es una receta muy típica de donde vivo, hagan la prueba y me entenderán. :)
