Ingredients

6 portions
  • 6 cups mushroom, finely chopped
  • 6 cups nopal, cut into squares
  • 2 tablespoons mashed tomatoes
  • 6 cups chicken soup, or chicken consommé
  • 1 pinch chipotle chili powder

Preparation

Cut the nopales into squares and put in the pan with a little olive oil. Let them release their liquid, stirring occasionally so they do not burn. Cook until they are well cooked.
Meanwhile, cut the mushrooms into small pieces. Reserve.
Once the nopales are ready, add the mushrooms and cook for another 5-10 minutes until they release all their juice.
Add the tomato puree and chicken broth. Stir.
Let it boil and add the chipotle powder and season with salt and pepper to taste.
