Ingredients

2 portions
  • 2 tablespoons coconut oil
  • 2 teaspoons cumin
  • 1 onion, medium, finely chopped
  • 3 tomatoes, finely chopped
  • 1 cauliflower, cut into medium pieces
  • 1 jalapeño, seedless and chopped
  • 1 cup kale, cut into slices
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric
  • 1 can coconut milk, sugarfree
  • 1 teaspoon sea ​​salt
  • 2 tablespoons fresh coriander, chopped
  • 1 cup Vegetables soup

Preparation

In a medium saucepan, put the coconut oil to melt for 30 seconds over medium heat
Add the onion and let cook for a minute, then add the tomatoes, stir and let them cook for a few more minutes until they are soft.
Add all the remaining ingredients and stir. Cover the pot and leave on low heat for 15 minutes, stirring every 5 minutes to avoid burning.
